Ginger Cardamom Peach Pie Filling (Freezer/Canning)

This recipe for Ginger Cardamom Peach Pie Filling is perfect for making ahead and freezing or canning. It captures the warm, comforting flavors of ginger and cardamom with sweet peaches, making pie assembly simple and quick.

Ingredients

Scale
  • 8 cups fresh peaches, peeled, pitted, and sliced
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice

Instructions

  1. Combine sliced peaches, sugar, cornstarch, grated ginger, ground cardamom, and salt in a large pot.
  2. Stir gently to coat the peaches evenly.
  3. Let the mixture sit for 15-20 minutes to allow the peaches to release their juices.
  4. Place the pot over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent sticking.
  5. Cook for 10-15 minutes, or until the filling thickens and the peaches are tender but still hold their shape.
  6. Remove the pot from heat and stir in the lemon juice.
  7. For freezing: Allow the filling to cool completely, then transfer to freezer-safe containers or bags. Freeze for up to 6 months.
  8. For canning: Ladle the hot filling into hot, sterilized canning jars, leaving 1/2 inch headspace. Remove air bubbles. Wipe rims clean. Center lids and apply bands until fingertip-tight.
  9. Process in a boiling water canner for 20 minutes (adjust time for altitude). Turn off heat, remove canner lid, and let jars sit for 5 minutes before removing to a wire rack to cool for 12-24 hours. Check seals before storing.

Notes

  • Use ripe but firm peaches for the best texture.
  • Adjust ginger and cardamom to your taste preference.
  • This filling can also be used for cobblers, crumbles, or as a topping for ice cream.
