  • 250g unsalted butter, softened
  • 100g granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 4 large eggs
  • 500g all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 150g mixed dried fruit (raisins, currants, candied peel)
  • 75g chopped almonds
  • 50ml rum or brandy (optional)
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, cream together the softened butter, granulated sugar, vanilla extract, and almond extract until light and fluffy.
  2. Beat in the eggs one at a time, mixing well after each addition.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Gently fold in the mixed dried fruit and chopped almonds. If using, pour in the rum or brandy and mix until evenly distributed.
  6. Cover the bowl and let the dough rest at room temperature for 30 minutes.
  7. Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
  8. Shape the dough into a round or oval loaf on the prepared baking sheet.
  9. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the Stollen cool completely on a wire rack.
  11. Once cooled, generously dust the top with powdered sugar.
