  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch pieces
  • 1/4 cup olive oil, divided
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a large rimmed baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread the potatoes in a single layer on one half of the prepared baking sheet.
  3. Roast the potatoes for 15 minutes while you prepare the chicken mixture.
  4. In the same bowl, toss the chicken pieces with the remaining 2 tablespoons of olive oil, 1/2 teaspoon salt, 1/4 teaspoon pepper, Italian seasoning, and garlic powder.
  5. In a small bowl, mix together the grated Parmesan cheese and minced garlic.
  6. After the potatoes have roasted for 15 minutes, remove the pan from the oven. Push the potatoes to one side.
  7. Add the seasoned chicken pieces to the empty side of the baking sheet, spreading them into a single layer.
  8. Sprinkle the Parmesan-garlic mixture evenly over the chicken pieces.
  9. Return the sheet pan to the oven and bake for an additional 15 to 20 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees F) and the potatoes are tender and lightly browned.
  10. Remove from the oven. Sprinkle with fresh parsley before serving immediately.
