1 pound white mushrooms, stems removed
2 tablespoons olive oil
1/4 cup finely chopped onion
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh chives
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat your oven to 375°F (190°C).
Clean the mushrooms and remove the stems. Finely chop the stems.
Heat olive oil in a skillet over medium heat. Add the chopped mushroom stems and onion. Cook until softened, about 5 minutes.
Add the minced garlic and cook for 1 minute more until fragrant.
Remove from heat and stir in Parmesan cheese, parsley, chives, salt, and pepper.
Spoon the filling into the mushroom caps.
Place the stuffed mushrooms on a baking sheet.
Bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden.
Serve warm.
Notes
You can substitute other fresh herbs like thyme or oregano.
For a richer flavor, add a tablespoon of cream cheese to the filling.
If you don’t have fresh herbs, use 1 teaspoon of dried mixed herbs.
