Garlic Butter Shrimp Pasta

This garlic butter shrimp pasta is quick and flavorful, perfect for a weeknight meal. It combines tender shrimp with a rich garlic butter sauce and al dente pasta for a satisfying dish.

  • 1 pound (about 450g) linguine or your favorite pasta
  • 2 tablespoons olive oil
  • 1 pound (about 450g) large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup (113g) unsalted butter
  • 1/4 cup (60ml) dry white wine or chicken broth
  • 1/4 cup (60ml) fresh lemon juice
  • 1/4 cup (10g) fresh parsley, chopped
  • Salt and black pepper to taste
  • Red pepper flakes (optional, for a kick)

Instructions

  1. Cook pasta according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque. Remove shrimp from skillet and set aside.
  4. Reduce heat to medium. Add butter to the skillet and melt.
  5. Add minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  6. Pour in white wine or chicken broth and lemon juice. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to reduce slightly.
  7. Return cooked shrimp to the skillet with the sauce.
  8. Add drained pasta to the skillet. Toss to coat the pasta and shrimp with the sauce. Add reserved pasta water a little at a time if the sauce is too thick.
  9. Stir in fresh parsley, salt, pepper, and red pepper flakes if using.
  10. Serve immediately.

Notes

  • For extra flavor, use fresh, high-quality shrimp.
  • Do not overcook the shrimp; they cook quickly.
  • Adjust the amount of garlic and lemon juice to your preference.
  • A sprinkle of grated Parmesan cheese at the end is a nice addition.
