1 pound raw, fresh shrimp, peeled, deveined, and cut into 1/2-inch pieces
1 cup fresh lime juice (about 8-10 limes)
1/4 cup fresh lemon juice (about 2 lemons)
1/2 cup finely chopped red onion
1 jalapeño pepper, seeded and minced
1/2 cup chopped fresh cilantro
1 ripe tomato, seeded and diced
1 avocado, diced (for serving)
Salt and freshly ground black pepper to taste
Optional: 1/4 cup orange juice for balance
Instructions
Place the cut shrimp in a non-reactive bowl (glass or ceramic).
Pour the lime juice and lemon juice over the shrimp, ensuring the shrimp is fully submerged. Add orange juice if using.
Stir gently. Cover the bowl and refrigerate for 30 to 45 minutes. The shrimp will turn opaque pink when cured. Check texture; it should be firm but tender, not rubbery.
Drain off about half of the citrus marinade.
Add the chopped red onion, minced jalapeño, cilantro, and diced tomato to the shrimp.
Stir to combine all ingredients. Season generously with salt and pepper.
Refrigerate for at least 15 minutes before serving to allow flavors to meld.
Serve chilled, topped with diced avocado.
Notes
Use only high-quality, very fresh shrimp for safety and best texture.
For a milder flavor, soak the chopped red onion in cold water for 10 minutes before adding it to the ceviche.
If you prefer a spicier ceviche, leave some seeds in the jalapeño.
