6 ripe peaches, peeled, pitted, and sliced
1/2 cup granulated sugar (for filling)
1/4 cup brown sugar (for filling)
1 teaspoon ground cinnamon (for filling)
1/4 teaspoon ground nutmeg (for filling)
1 tablespoon lemon juice (for filling)
1 1/2 cups all-purpose flour (for topping)
1/2 cup granulated sugar (for topping)
1 tablespoon baking powder (for topping)
1/2 teaspoon salt (for topping)
1/2 cup unsalted butter, cold and cut into cubes (for topping)
1/2 cup milk (for topping)
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the sliced peaches, 1/2 cup granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Toss gently to coat the peaches.
Pour the peach mixture into a 9×13 inch baking dish.
In another bowl, whisk together the flour, 1/2 cup granulated sugar, baking powder, and salt for the topping.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Stir in the milk until just combined, being careful not to overmix.
Drop spoonfuls of the biscuit topping over the peach mixture in the baking dish.
Bake for 35-45 minutes, or until the topping is golden brown and the peaches are bubbly and tender.
Let the cobbler cool slightly before serving.

Choose ripe, fragrant peaches for the best flavor.
Serve with a scoop of vanilla ice cream or a dollop of whipped cream.
