French Crepes with Nutella

  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter, plus more for cooking
  • Nutella, for filling
  • Fresh fruit, for filling

Instructions

  1. In a medium bowl, whisk together the flour and salt.
  2. In a separate bowl, whisk the eggs, milk, and water.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
  4. Stir in the melted butter.
  5. Heat a lightly oiled or buttered non-stick skillet or crepe pan over medium heat.
  6. Pour about 1/4 cup of batter into the hot pan and swirl immediately to coat the bottom thinly.
  7. Cook for about 1-2 minutes, until the edges start to lift and the bottom is lightly golden.
  8. Flip the crepe and cook for another 30 seconds to 1 minute.
  9. Slide the cooked crepe onto a plate.
  10. Spread with Nutella and top with fresh fruit.
  11. Fold or roll the crepe and serve immediately.

Notes

  • For thinner crepes, add a tablespoon or two more water to the batter.
  • Let the batter rest for at least 30 minutes for best results.
  • You can make the batter ahead of time and store it in the refrigerator for up to 2 days.
