2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups milk
1 egg
2 tablespoons melted butter
1 cup fresh blueberries
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Gently fold in the fresh blueberries.
Heat a lightly oiled griddle or frying pan over medium heat.
Pour about 1/4 cup of batter for each pancake onto the hot griddle.
Cook for 2-3 minutes per side, or until golden brown and cooked through.
Serve warm and enjoy!
Notes
For extra fluffy pancakes, be careful not to overmix the batter. A few lumps are okay!
You can substitute frozen blueberries for fresh ones. If using frozen, do not thaw them before adding to the batter.
Add a little lemon zest to the batter for a brighter flavor.
