  • 10 everything bagels, cut into 1-inch cubes
  • 1 pound breakfast sausage, casings removed
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 cup shredded cheddar cheese
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Spread bagel cubes in a single layer on a baking sheet. Toast in a preheated oven at 350°F (175°C) for 10-12 minutes, or until lightly golden and crisp. Remove from oven and set aside.
  2. In a large skillet, cook the breakfast sausage over medium heat until browned. Drain off any excess grease.
  3. Add the chopped onion and red bell pepper to the skillet with the sausage. Cook until the vegetables are softened, about 5-7 minutes.
  4. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  5. In a greased 9×13 inch baking dish, layer half of the toasted bagel cubes.
  6. Spread the sausage and vegetable mixture evenly over the bagel cubes.
  7. Sprinkle half of the cheddar cheese over the sausage mixture.
  8. Layer the remaining bagel cubes on top.
  9. Pour the egg mixture evenly over the casserole.
  10. Cover the baking dish with foil and refrigerate overnight, or for at least 4 hours.
  11. When ready to bake, preheat your oven to 350°F (175°C).
  12. Remove the foil and bake for 45-55 minutes, or until the casserole is set and golden brown.
  13. Let stand for 5-10 minutes before serving.

Notes

  • You can substitute cream cheese for some of the shredded cheese for an extra creamy texture.
  • Add a pinch of garlic powder or onion powder to the egg mixture for more flavor.
  • Feel free to add other vegetables like mushrooms or spinach.
