4 ears of corn, shucked
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons lime juice
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional)
1/4 cup crumbled cotija cheese
2 tablespoons chopped fresh cilantro
Lime wedges, for serving
Instructions
Preheat your grill or oven to medium-high heat.
Grill or roast the corn until tender and slightly charred, about 10-15 minutes, turning occasionally.
While the corn is cooking, whisk together the mayonnaise, sour cream, lime juice, chili powder, cumin, and cayenne pepper (if using) in a small bowl.
Once the corn is cooked, carefully spread the mayonnaise mixture evenly over each ear of corn.
Sprinkle the crumbled cotija cheese and chopped cilantro over the top.
Serve immediately with lime wedges.
Notes
For a spicier kick, add more cayenne pepper or a pinch of hot sauce to the mayonnaise mixture.
If you can’t find cotija cheese, feta cheese can be used as a substitute.
You can also boil or air fry the corn if grilling is not an option.
