  • 8 cups challah or brioche bread, cut into 1-inch cubes
  • 4 large eggs
  • 2 cups eggnog
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional toppings: whipped cream, extra cinnamon, powdered sugar

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Spread the bread cubes evenly in the prepared dish.
  3. In a large bowl, whisk together the eggs, eggnog, granulated sugar, cinnamon, nutmeg, salt, and vanilla extract until well combined.
  4. Pour the eggnog mixture evenly over the bread cubes, ensuring all pieces are moistened.
  5. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
  6. Preheat your oven to 350°F (175°C).
  7. Remove the plastic wrap and bake for 40-50 minutes, or until the casserole is puffed, golden brown, and a knife inserted into the center comes out clean.
  8. Let it cool for a few minutes before serving.
