Easy Peach and Raspberry Cobbler

  • 2 lbs fresh peaches, sliced
  • 1 cup fresh raspberries
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp lemon juice
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup cold unsalted butter, cut into cubes
  • 1/2 cup milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine peaches, raspberries, 1/2 cup sugar, cornstarch, and lemon juice. Pour into an 8×8 inch baking dish.
  3. In a separate bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Stir in the milk until just combined. Do not overmix.
  6. Drop spoonfuls of the biscuit topping over the fruit mixture.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbly.
  8. Let cool slightly before serving.

Notes

  • You can use frozen fruit if fresh is not available. Thaw and drain excess liquid before using.
  • Serve warm with a scoop of ice cream or whipped cream.
