Instructions

  1. Combine mochiko and sugar in a microwave-safe bowl.
  2. Gradually add water, stirring until smooth.
  3. Cover the bowl with plastic wrap, leaving a small vent.
  4. Microwave on high for 1 minute.
  5. Stir the mixture well.
  6. Microwave again for 1 minute.
  7. Stir until the mixture becomes thick and translucent.
  8. Dust a clean surface generously with potato starch or cornstarch.
  9. Carefully transfer the hot mochi dough onto the dusted surface.
  10. Dust the top of the mochi with more starch.
  11. Gently flatten the mochi with your hands or a rolling pin.
