Ultimate Creamy Baked ‘Crack’ Corn Dip with Jalapeño

This is the ultimate crowd-pleasing, cheesy corn dip recipe, perfect for game day or your next party. It is creamy, savory, and has a slight kick from jalapeño.

  • 1 (8 ounce) package cream cheese, softened
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded sharp cheddar cheese, plus extra for topping
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped green onions
  • 1/4 cup diced pickled jalapeños (or more, to taste)
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a medium baking dish (about 8×8 inches).
  2. In a large bowl, combine the thawed corn, softened cream cheese, sour cream, and mayonnaise. Mix until the mixture is smooth and well combined.
  3. Stir in the cheddar cheese, Parmesan cheese, green onions, diced jalapeños, chili powder, garlic powder, salt, and pepper. Mix everything thoroughly until all ingredients are evenly distributed.
  4. Transfer the corn dip mixture into your prepared baking dish.
  5. Sprinkle an extra layer of cheddar cheese over the top of the dip. If using, mix the panko breadcrumbs with a teaspoon of melted butter and sprinkle over the cheese layer for a crunchy topping.
  6. Bake for 20 to 25 minutes, or until the dip is hot and bubbly throughout and the cheese topping is melted and lightly golden brown.
  7. Let the dip cool for about 5 minutes before serving warm with tortilla chips, crackers, or vegetable sticks.

  • For a smoky twist, sauté the corn in a skillet with a teaspoon of olive oil and a pinch of smoked paprika before mixing it into the dip base.
  • If you prefer a slow cooker method for this party dip, combine all ingredients (omit panko topping) and cook on low for 2 hours or high for 1 hour, stirring halfway through.
