Chocolate Chip Cookie Brownies

These cookie brownies combine a chewy brownie base with a gooey chocolate chip cookie topping, creating a decadent hybrid dessert.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (for brownie)
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips (for cookie)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. For the brownie layer: In a medium bowl, whisk together melted butter and granulated sugar until smooth.
  3. Whisk in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  5. Gradually add dry ingredients to the wet ingredients, mixing until just combined. Fold in 1/2 cup chocolate chips.
  6. Spread the brownie batter evenly into the prepared pan.
  7. For the cookie layer: In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  8. Beat in the egg and vanilla extract until well combined.
  9. In a separate bowl, whisk together flour, baking soda, and salt.
  10. Gradually add dry ingredients to the wet ingredients, mixing until just combined. Fold in 1 cup chocolate chips.
  11. Spoon dollops of the cookie dough over the brownie layer and gently spread it out to cover the brownie. It’s okay if it’s not perfectly even.
  12. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  13. Let cool completely in the pan before lifting out and cutting into squares.

Notes

  • Do not overmix the batter for either layer.
  • Allow the brownies to cool completely for clean cuts.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
