1 pound shrimp, peeled and deveined
1 pound pasta (gluten-free if desired)
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1/2 cup dairy-free chicken or vegetable broth
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Fresh parsley, chopped, for garnish
Instructions
Cook pasta according to package directions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Stir in garlic and cook for 1 minute until fragrant.
Add crushed tomatoes, broth, oregano, and red pepper flakes (if using). Bring to a simmer and cook for 10-15 minutes, allowing the sauce to thicken slightly.
Season the sauce with salt and black pepper to taste.
