Crunchy topping squash casserole

A delicious and easy squash casserole recipe with a delightful crunchy topping, perfect for any meal.

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups cubed butternut squash (about 1 medium squash)
  • 1 cup vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped pecans or walnuts
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in the cubed squash, vegetable broth, salt, and pepper. Bring to a simmer, then cover and cook for 15-20 minutes, or until squash is tender.
  5. While the squash is cooking, combine breadcrumbs, chopped nuts, and melted butter in a small bowl.
  6. Transfer the cooked squash mixture to a baking dish.
  7. Sprinkle the breadcrumb and nut mixture evenly over the top of the squash.
  8. Bake for 20-25 minutes, or until the topping is golden brown and crispy.
  9. Let stand for a few minutes before serving.

Notes

  • You can use other types of squash like acorn or delicata.
  • For a spicier kick, add a pinch of red pepper flakes to the squash mixture.
  • Feel free to substitute other nuts or seeds for the pecans/walnuts.
