  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup chicken broth
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh basil (for garnish)

Instructions

  1. Place the chicken in the bottom of your slow cooker. Season the chicken evenly with salt, pepper, and garlic powder.
  2. In a separate bowl, whisk together the chicken broth, cream of chicken soup, heavy cream, Parmesan cheese, chopped sun-dried tomatoes, and minced garlic until smooth.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the chicken is cooked through and easily shreds.
  5. Remove the chicken and shred it using two forks, or leave it whole if preferred. Return the chicken to the sauce and stir to coat.
  6. Cook on low for an additional 15 minutes to heat through.
  7. Garnish with fresh basil before serving. Serve over pasta, rice, or with crusty bread.

Notes

  • For thicker sauce, remove the lid for the last 30 minutes of cooking time.
  • If using chicken thighs, the cooking time may be slightly longer to reach tenderness.
  • Do not stir the sauce mixture before pouring it over the chicken; this helps prevent the Parmesan from clumping.
