Ultimate Crockpot French Onion Meatloaf with Molten Swiss Cheese

Make this easy Crockpot French Onion Meatloaf for a hands-off dinner. Slow cooking keeps the ground beef incredibly juicy, while French onion soup mix adds deep, savory flavor. Top with melted Swiss cheese for the ultimate comfort food.

  • 2 lbs ground beef
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 packet (1.25 oz) dry onion soup mix (French onion flavor)
  • 1/4 cup finely chopped onion (optional, for extra flavor)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 (10.5 oz) can condensed French onion soup, undiluted
  • 4 slices Swiss cheese

Instructions

  1. In a large bowl, gently combine the ground beef, egg, breadcrumbs, milk, dry onion soup mix, optional chopped onion, Worcestershire sauce, pepper, and salt. Do not overmix.
  2. Shape the mixture into a loaf shape and place it in the bottom of a 5 or 6-quart slow cooker.
  3. Pour the undiluted condensed French onion soup evenly over the top of the meatloaf.
  4. Cover the slow cooker and cook on low for 5 to 6 hours or on high for 3 to 3.5 hours. The internal temperature should reach 160°F.
  5. About 15 minutes before serving, remove the lid and place the Swiss cheese slices on top of the meatloaf. Replace the lid until the cheese is melted and gooey.
  6. Slice and serve the meatloaf with the accumulated onion sauce from the bottom of the slow cooker.

Notes

  • For an extra savory flavor, use half ground beef and half ground chuck.
  • Serve this juicy meatloaf with mashed potatoes or green beans for a complete family friendly meal.
  • If you want a thicker sauce, remove the meatloaf after cooking, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, stir into the liquid in the crockpot, and cook on high for 10 minutes until thickened.
