Crockpot Creamy Broccoli Cheddar Chicken

A creamy, cheesy chicken and broccoli dish made in the slow cooker. It’s a comforting and easy meal perfect for any night of the week.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese

Instructions

  1. Place chicken breasts in the bottom of your slow cooker.
  2. Pour chicken broth over the chicken.
  3. In a small bowl, whisk together cream cheese, heavy cream, garlic powder, onion powder, salt, and pepper until smooth.
  4. Pour the cream cheese mixture over the chicken.
  5. Cover and cook on low for 4-6 hours, or until chicken is cooked through and tender.
  6. Remove chicken from the slow cooker and shred it using two forks.
  7. Return shredded chicken to the slow cooker.
  8. Stir in broccoli florets and shredded cheddar cheese.
  9. Cover and cook on high for another 30-45 minutes, or until the broccoli is tender and the cheese is melted and bubbly.
  10. Stir everything together and serve hot.

Notes

  • You can use chicken thighs if preferred.
  • Adjust seasonings to your taste.
  • For a thicker sauce, you can mix in a tablespoon of cornstarch with the cream cheese mixture.
