A close-up serving of moist crock pot chicken and stuffing topped with savory gravy on a white plate.

Make this comforting, hearty Crock Pot Chicken and Stuffing for a simple, hands-off weeknight meal. The slow cooker creates tender chicken and flavorful gravy with minimal effort.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1 (10.5 oz) can condensed cream of celery soup (or use two cream of chicken)
  • 1 cup water or chicken broth
  • 1 packet (about 6 oz) dry stuffing mix (any flavor)
  • 1 cup frozen green beans (optional)

Instructions

  1. Lightly spray the inside of your slow cooker with cooking spray or line it with a slow cooker liner for easy cleanup.
  2. Place the chicken pieces in a single layer on the bottom of the slow cooker.
  3. In a separate bowl, whisk together the cream of chicken soup, cream of celery soup, and water or broth until smooth. Pour this mixture evenly over the chicken.
  4. If using, scatter the frozen green beans over the top of the chicken and soup mixture.
  5. Sprinkle the dry stuffing mix evenly over the top layer. Do not stir the stuffing into the liquid; this layering technique helps prevent soggy stuffing.
  6. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and tender.
  7. Shred the chicken directly in the slow cooker using two forks, mixing it gently with the stuffing and gravy. Let it sit for 10 minutes before serving so the stuffing absorbs more moisture.
  8. Serve warm for a perfect comfort food dinner.

Notes

  • To achieve the best texture, avoid stirring the stuffing into the liquid before cooking. Layering keeps the top layer slightly fluffier.
  • If you prefer a richer flavor, substitute the water with chicken broth.
  • This recipe works well with chicken thighs for extra moisture, or chicken breasts for a leaner option.
