1 1/2 cups panko breadcrumbs
1/4 cup grated Parmesan cheese (optional)
2 cups pickle chips, drained and patted dry
1/4 cup cooking spray or oil for frying
Instructions
In a shallow dish, whisk together the flour, salt, pepper, garlic powder, and cayenne pepper (if using).
In another shallow dish, place the beaten eggs.
In a third shallow dish, combine the panko breadcrumbs and Parmesan cheese (if using).
Dip each pickle chip into the flour mixture, shaking off any excess.
Next, dip the floured pickle chip into the beaten eggs, allowing excess to drip off.
Finally, coat the pickle chip with the panko breadcrumb mixture, pressing gently to adhere.
Place the coated pickle chips on a plate or baking sheet.
Heat your cooking spray or oil in a large skillet over medium-high heat.
Carefully place the pickle chips in the hot skillet in a single layer, working in batches if necessary.
Fry for 2-3 minutes per side, until golden brown and crispy.
Remove the fried pickle chips from the skillet and place them on a wire rack or paper towel-lined plate to drain.
