  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon milk
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/4 cup vegetable oil, for frying

Instructions

  1. Cut chicken breasts into 1-inch strips.
  2. In a shallow bowl, whisk together flour, salt, and pepper.
  3. In another shallow bowl, whisk eggs and milk.
  4. In a third shallow bowl, combine panko breadcrumbs and Parmesan cheese if using.
  5. Dredge each chicken tender first in the flour mixture, shaking off excess.
  6. Dip the floured tender into the egg mixture, allowing excess to drip off.
  7. Coat the tender thoroughly with the panko mixture, pressing gently to adhere.
  8. Heat vegetable oil in a large skillet over medium-high heat.
  9. Carefully place chicken tenders in the hot oil, being careful not to overcrowd the pan.
  10. Fry for 3-4 minutes per side, until golden brown and cooked through.
  11. Remove tenders from the skillet and place on a wire rack to drain.
