  • 1/2 cup cream cheese, softened
  • 1/4 cup salsa
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 12-15 corn tortillas
  • Vegetable oil for frying
  • For serving: sour cream, guacamole, extra salsa

Instructions

  1. In a medium bowl, combine the shredded chicken, softened cream cheese, salsa, cumin, chili powder, and garlic powder. Mix until well combined.
  2. Warm the corn tortillas slightly in the microwave or a dry skillet to make them pliable. This prevents them from breaking when rolled.
  3. Spoon about 2 tablespoons of the chicken mixture onto one end of each tortilla.
  4. Roll the tortillas tightly, securing them with a toothpick if needed.
  5. Heat about 1 inch of vegetable oil in a large skillet or deep pot over medium-high heat.
  6. Carefully place a few taquitos into the hot oil, seam-side down. Do not overcrowd the pan.
  7. Fry for 2-3 minutes per side, or until golden brown and crispy.
  8. Remove the taquitos from the oil and place them on a plate lined with paper towels to drain excess oil.
  9. Remove toothpicks before serving.
  10. Serve hot with sour cream, guacamole, and salsa.

Notes

  • You can use leftover rotisserie chicken for quick preparation.
  • Adjust the spice level by adding more or less chili powder.
  • For a healthier option, you can bake the taquitos at 400°F (200°C) for 15-20 minutes, flipping halfway, until crispy.
