Crispy Cauliflower Buffalo Bites

These crispy cauliflower buffalo bites are a delicious vegan appetizer that perfectly mimics the flavor and texture of chicken wings. Baked until golden and tossed in a tangy buffalo sauce, they’re a crowd-pleasing favorite for game days or any gathering.

Ingredients

Scale
  • 1 large head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup unsweetened plant-based milk
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup buffalo sauce (your favorite brand)
  • 2 tablespoons vegan butter, melted
  • Optional: Vegan ranch or blue cheese dressing for dipping
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the plant-based milk, flour, garlic powder, onion powder, salt, and pepper to create a batter.
  3. Add the cauliflower florets to the batter and toss until evenly coated.
  4. In a separate shallow dish, combine the panko breadcrumbs.
  5. Dredge each battered cauliflower floret in the panko breadcrumbs, ensuring a good coating.
  6. Place the breaded cauliflower bites onto the prepared baking sheet in a single layer.
  7. Bake for 20-25 minutes, flipping halfway through, until the cauliflower is tender and the breading is golden brown and crispy.
  8. While the cauliflower bakes, combine the buffalo sauce and melted vegan butter in a large bowl.
  9. Once the cauliflower is baked, add the crispy bites to the buffalo sauce mixture and toss gently to coat.
  10. Serve immediately with your favorite dipping sauce and a sprinkle of fresh parsley if desired.

Notes

  • For extra crispy bites, you can bake the cauliflower for an additional 5-10 minutes after tossing them in the sauce.
  • Adjust the amount of buffalo sauce to your spice preference.
  • Feel free to add a pinch of cayenne pepper to the batter for an extra kick.
