  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)

Instructions

  1. Place chicken pieces in a large bowl or resealable bag. Pour buttermilk over chicken, ensuring all pieces are coated. Cover or seal and refrigerate for at least 4 hours, or preferably overnight.
  2. In a shallow dish, whisk together eggs and a splash of buttermilk.
  3. In another shallow dish, whisk together flour, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper (if using).
  4. Remove chicken pieces from buttermilk, letting excess drip off. Dip each piece into the egg mixture, then dredge thoroughly in the seasoned flour mixture, pressing to coat evenly. Place coated chicken on a wire rack.
  5. Heat about 2-3 inches of vegetable oil in a large, heavy-bottomed skillet or Dutch oven to 350°F (175°C).
  6. Carefully place chicken pieces into the hot oil, ensuring not to overcrowd the pan. Fry in batches.
  7. Fry chicken for about 6-8 minutes per side, or until golden brown, crispy, and cooked through. The internal temperature should reach 165°F (74°C).
