2 medium zucchinis
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder

1/4 cup all-purpose flour

Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
Wash and trim the ends off the zucchinis. Cut each zucchini into fry-like sticks, about 1/4 inch thick.
Set up a dredging station with three shallow bowls. In the first bowl, place the flour. In the second bowl, whisk the eggs. In the third bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
Dip each zucchini stick first into the flour, shaking off any excess. Then, dip it into the beaten eggs, letting any excess drip off. Finally, coat the zucchini stick thoroughly with the panko mixture, pressing gently to help it adhere.
Place the coated zucchini fries in a single layer on the prepared baking sheet. Ensure they are not overcrowding the pan.
Lightly spray the tops of the zucchini fries with cooking spray for extra crispiness.
Bake for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.
