1 pound pasta
2 tablespoons olive oil
1 small onion, chopped
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, drained and chopped
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
1 1/2 cups heavy cream
1/2 cup grated Parmesan cheese
Salt and freshly ground black pepper to taste
Fresh basil for garnish (optional)
Instructions
Cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.
While pasta is cooking, heat olive oil in a large skillet over medium heat.
Add chopped onion and cook until softened, about 5 minutes.
Stir in minced garlic, chopped sun-dried tomatoes, dried oregano, and red pepper flakes (if using). Cook for 1 minute until fragrant.
Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally, until the sauce has thickened slightly.
Stir in grated Parmesan cheese until melted and the sauce is smooth.
Add the drained pasta to the skillet with the sauce. Toss to coat.
If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
Season with salt and freshly ground black pepper to taste.
Serve immediately, garnished with fresh basil if desired.
Notes
You can use different types of pasta like fettuccine, penne, or rotini.
For a richer flavor, you can add a splash of white wine to the skillet after cooking the garlic and sun-dried tomatoes, letting it simmer for a minute before adding the cream.
If you don’t have fresh basil, a pinch of dried basil can be added with the oregano.
