1 pound mushrooms, sliced
1 medium onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 cup heavy cream
1 teaspoon fresh thyme leaves
Salt and black pepper to taste
Instructions
Heat olive oil in a large pot over medium heat. Add mushrooms and cook until browned, about 5-7 minutes.
Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
Pour in vegetable broth and bring to a simmer.
Stir in heavy cream and fresh thyme. Season with salt and pepper to taste.
Heat through gently, do not boil.
