Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 2 teaspoons Cajun seasoning, or more to taste
  • 1 large red bell pepper, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 large yellow bell pepper, thinly sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 8 ounces fettuccine or linguine
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add shrimp and Cajun seasoning. Cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Add bell peppers and onion to the same skillet. Cook for 5-7 minutes, or until softened.
  5. Stir in minced garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and bring to a simmer. Cook for 3-5 minutes, allowing liquid to reduce slightly.
  7. Stir in heavy cream and Parmesan cheese. Cook for 2-3 minutes, until sauce thickens.
  8. Return cooked shrimp to the skillet with the sauce.
  9. Add cooked pasta to the skillet and toss to coat everything in the creamy sauce.
  10. Garnish with fresh parsley before serving.

Notes

  • Adjust Cajun seasoning to your preferred spice level.
  • For a richer sauce, use half and half instead of heavy cream.
  • Add a pinch of red pepper flakes for extra heat.
  • Serve with crusty bread to soak up the delicious sauce.
