  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 8 ounces pasta (fettuccine or penne work well)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Toss shrimp with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink. Remove shrimp from the skillet and set aside.
  4. Add butter to the same skillet. Add onion and cook until softened, about 3 minutes.
  5. Add garlic and cook for 1 minute until fragrant.
  6. If using wine, pour it in and let it simmer, scraping up any browned bits. Cook until reduced by half.
  7. Stir in heavy cream and chicken broth. Bring to a gentle simmer.
  8. Reduce heat to low. Stir in Parmesan cheese until the sauce is smooth. Season with salt and pepper.
  9. Add the cooked pasta and shrimp back to the skillet. Toss everything to coat evenly in the sauce.
  10. Serve immediately, garnished with fresh parsley.

Notes

  • Adjust the amount of Cajun seasoning based on your preferred spice level.
  • For a lighter sauce, substitute half-and-half for some of the heavy cream.
  • If you skip the wine, use a little extra chicken broth.
