Cranberry BBQ Pulled Pork Sandwiches

Transform your leftover ham or pork into amazing Cranberry BBQ Pulled Pork Sandwiches. This recipe gives your leftovers a sweet and tangy update perfect for any day of the week.

  • 2 cups cooked, shredded pork or ham
  • 1 cup cranberry sauce
  • 1/2 cup barbecue sauce
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Pinch of salt and pepper
  • 4 sandwich buns
  • Optional: Coleslaw for topping

Instructions

  1. In a medium saucepan, combine the cranberry sauce, barbecue sauce, apple cider vinegar, brown sugar, smoked paprika, garlic powder, salt, and pepper.
  2. Heat the sauce mixture over medium heat, stirring until it simmers and the sugar dissolves.
  3. Add the shredded pork or ham to the sauce. Stir well to coat all the meat evenly.
  4. Reduce the heat to low. Let the mixture simmer for 10 to 15 minutes, stirring occasionally, allowing the pork to absorb the flavors.
  5. Toast your sandwich buns lightly.
