Cranberry Almond Baked Oatmeal

  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup pure maple syrup
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen cranberries
  • 1/2 cup sliced almonds

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, whisk together the milk, applesauce, maple syrup, egg, vanilla extract, baking powder, cinnamon, and salt.
  3. Stir in the rolled oats until just combined.
  4. Gently fold in the cranberries.
  5. Pour the mixture into the prepared baking dish.
  6. Sprinkle the sliced almonds evenly over the top.
  7. Bake for 30 to 35 minutes, or until the top is golden brown and the center is set.
  8. Let it cool for a few minutes before cutting and serving warm.

Notes

  • You can substitute dried cranberries if you do not have fresh ones. Add them during the last 10 minutes of baking to prevent burning.
