2 large sweet potatoes
4 ounces Butterkase cheese, cut into small cubes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh chives (for garnish)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Wash the sweet potatoes thoroughly and prick each potato several times with a fork.
Rub the potatoes lightly with olive oil, salt, and pepper.
Place the potatoes directly on the oven rack or on a baking sheet lined with foil.
Bake for 45 to 60 minutes, or until the potatoes are tender when squeezed.
Remove the potatoes from the oven and let them cool slightly for about 5 minutes.
Slice each potato lengthwise down the center, opening it up but not cutting all the way through. Gently fluff the inside flesh with a fork.
Divide the cubed Butterkase cheese evenly and place it inside the opening of each sweet potato.
Return the stuffed potatoes to the oven for 5 to 7 minutes, or until the cheese is fully melted and bubbly.
Remove from the oven, sprinkle with fresh chives, and serve immediately.
Notes
For a softer interior, wrap the sweet potatoes individually in foil before baking.
If you cannot find Butterkase, substitute with a soft, mild melting cheese like Havarti or mild Brie.
You can add a pinch of smoked paprika to the cheese mixture for extra depth of flavor.
