2 cups fresh corn kernels (from about 3-4 ears of corn)
1/2 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup milk
1 large egg, lightly beaten
2 tablespoons chopped fresh chives or green onions
Vegetable oil, for frying
For the Hot Honey:
1/2 cup honey
1-2 tablespoons hot sauce (adjust to taste)
Instructions
In a large bowl, combine the corn kernels, flour, cornstarch, baking powder, salt, and pepper. Stir to combine.
In a separate small bowl, whisk together the milk and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chives or green onions. Do not overmix.
Heat about 1 inch of vegetable oil in a large skillet or cast iron pan over medium-high heat. The oil is ready when a small drop of batter sizzles immediately.
Carefully drop spoonfuls of the batter into the hot oil, flattening slightly with the back of the spoon to form fritters. Do not overcrowd the pan.
Fry for 2-3 minutes per side, or until golden brown and crispy.
Using a slotted spoon, transfer the cooked fritters to a wire rack lined with paper towels to drain excess oil.
While the fritters are frying, prepare the hot honey. In a small saucepan, combine the honey and hot sauce. Heat over low heat, stirring occasionally, until warmed through and well combined.
Arrange the hot corn fritters on a serving platter. Drizzle generously with the hot honey before serving.
Notes
For extra flavor, you can add a pinch of cayenne pepper to the fritter batter.
If you don’t have fresh corn, thawed frozen corn kernels can be used. Make sure to pat them dry before adding to the batter.
The hot honey can be made ahead of time and stored at room temperature. Gently reheat before serving.
