Corn Chowder with Bacon and Chives

  • 1 tablespoon olive oil
  • 4 slices bacon, chopped
  • 1 medium yellow onion, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 3 cups fresh or frozen corn kernels
  • 2 medium potatoes, peeled and diced
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh chives, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped bacon and cook until crisp. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the pot.
  3. Add onion and celery to the pot. Cook until softened, about 5 minutes.
  4. Stir in garlic and cook for 1 minute until fragrant.
  5. Pour in the broth. Add diced potatoes and corn kernels. Bring the mixture to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  6. Stir in the heavy cream. Heat through gently; do not boil after adding cream.
  7. Season with salt and pepper. Taste and adjust seasoning as needed.
  8. Ladle the chowder into bowls. Top each serving with reserved crispy bacon and fresh chopped chives.

Notes

  • For a thicker chowder, mash about 1/4 of the potatoes against the side of the pot before adding the cream.
  • You can substitute smoked turkey bacon for a slightly different flavor profile.
  • If using fresh corn, cut kernels from about 3 large ears of corn.
