1 tablespoon olive oil
1 pound ground chicken
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1/4 cup soy sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 teaspoon white pepper
1 cup chopped water chestnuts
1/2 cup chopped green onions
1/4 cup chopped peanuts
12-16 butter lettuce leaves
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add ground chicken and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess fat.
Stir in minced garlic and grated ginger. Cook for 1 minute until fragrant.
In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, and white pepper.
Pour the sauce over the chicken mixture.
Add chopped water chestnuts and green onions. Cook for 2-3 minutes until heated through and slightly thickened.
Stir in chopped peanuts.
Spoon the chicken mixture into butter lettuce leaves to serve.
Notes
For a spicier kick, add a pinch of red pepper flakes to the sauce.
You can substitute ground turkey or pork for the ground chicken.
Serve with additional chopped peanuts and green onions for garnish.
