Colorful Rainbow Veggie Grilled Cheese

Make lunchtime fun and nutritious with this Colorful Rainbow Veggie Grilled Cheese. It is a simple way to get your kids excited about eating colorful vegetables disguised in their favorite sandwich.

  • 2 slices bread (your favorite kind)
  • 1 tablespoon butter or mayonnaise, softened
  • 1/4 cup shredded cheese blend (cheddar, mozzarella)
  • 2 thin slices tomato
  • 2 thin slices cucumber
  • 2 thin slices yellow bell pepper
  • 2 thin slices orange bell pepper
  • 2 thin slices carrot, shaved into ribbons
  • Pinch of salt and pepper

Instructions

  1. Prepare your vegetables. If using carrots, use a vegetable peeler to make thin ribbons. Slice the tomatoes and peppers thinly.
  2. Spread butter or mayonnaise evenly on one side of each bread slice. This is the outside of your sandwich.
  3. Flip the bread over. On the unbuttered side of one slice, layer half the cheese.
  4. Arrange the colorful vegetables in layers on top of the cheese. Try to use a variety for the rainbow effect.
  5. Sprinkle the remaining cheese over the vegetables. Top with the second slice of bread, butter side facing up.
  6. Heat a non-stick skillet over medium heat.
  7. Place the sandwich in the hot skillet. Cook for 3 to 4 minutes per side, pressing gently with a spatula until the bread is golden brown and the cheese is melted and gooey.
  8. Slice in half and serve immediately.

Notes

  • Shaving carrots thinly helps them cook faster and soften inside the sandwich.
  • Use different colors of bell peppers (red, yellow, orange) for the best rainbow look.
  • For extra flavor, mix a small amount of dried herbs into your shredded cheese before layering.
  • If your bread is thick, cook on slightly lower heat to ensure the cheese melts completely before the bread burns.
