Cold Shrimp Pasta Salad with Herbs

This cold shrimp pasta salad with herbs is a light and refreshing dish. It combines tender shrimp, pasta, and fresh herbs in a simple dressing.

  • 8 ounces small pasta, such as rotini or fusilli
  • 1 pound cooked shrimp, peeled and deveined, tails removed
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • Salt and black pepper to taste
  • 1/2 cup chopped celery
  • 1/4 cup finely diced red onion

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water until cooled.
  2. In a large bowl, combine cooked pasta, shrimp, celery, and red onion.
  3. In a small bowl, whisk together mayonnaise, sour cream, lemon juice, and Dijon mustard.
  4. Stir in fresh dill, parsley, and chives.
  5. Pour dressing over the pasta and shrimp mixture. Toss gently to coat.
  6. Season with salt and black pepper to taste.
  7. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

  • For extra flavor, lightly marinate the cooked shrimp in a little lemon juice and olive oil before adding to the salad.
  • This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
  • Adjust the amount of herbs to your liking; fresh basil or tarragon also work well.
