Coconut Snowball Cake

Create a delightful Coconut Snowball Cake that looks like a winter wonderland. This cake is perfect for holiday celebrations and is covered in shredded coconut for a festive, snowy appearance.

  • 3 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 (16 ounce) can vanilla frosting
  • 3 cups shredded sweetened coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, combine the white cake mix, eggs, water, vegetable oil, unsweetened applesauce, and vanilla extract.
  3. Beat with an electric mixer on low speed until just combined. Then, increase speed to medium and beat for 2 minutes, until the batter is smooth.
  4. Pour the batter evenly into the prepared cake pans.
  5. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then invert them onto a wire rack to cool completely.
  7. Once the cakes are completely cool, place one cake layer on your serving plate.
  8. Spread a layer of vanilla frosting over the top of the first cake layer.
  9. Place the second cake layer on top of the frosting.
  10. Frost the top and sides of the entire cake with the remaining vanilla frosting.
  11. Generously sprinkle the shredded coconut all over the frosted cake, pressing gently to help it adhere.
  12. Chill the cake for at least 30 minutes before slicing and serving.

Notes

  • For an extra snowy effect, toast some of the coconut until lightly golden brown and mix it with the white shredded coconut.
  • You can add a few drops of blue food coloring to a small portion of the frosting to create subtle icy accents if desired.
