2 large egg whites
1/2 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups shredded sweetened coconut
1/2 cup semi-sweet chocolate chips
1 teaspoon coconut oil (optional)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the egg whites, granulated sugar, and salt until well combined.
Stir in the vanilla extract and shredded coconut. Mix until the coconut is evenly coated.
Drop rounded tablespoons of the coconut mixture onto the prepared baking sheet.
Bake for 12-15 minutes, or until the edges are golden brown. Let the macaroons cool completely on the baking sheet.
While the macaroons cool, melt the chocolate chips. You can do this in a microwave-safe bowl in 30-second intervals, stirring in between, or over a double boiler. Stir in the coconut oil if using, for a smoother consistency.
Dip the bottom half of each cooled macaroon into the melted chocolate. Place them back on the parchment paper to allow the chocolate to set.
Once the chocolate has hardened, your coconut macaroons are ready to enjoy!
