  • 2 boneless, skinless chicken breasts
  • 4 slices bacon, cooked and crumbled
  • 3 hard-boiled eggs, chopped
  • 1 ripe avocado, diced
  • 1 head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons chopped fresh chives
  • For the Dressing:
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook chicken breasts according to your preferred method (grill, bake, or pan-sear). Let cool, then dice.
  2. Prepare the dressing by whisking together olive oil, red wine vinegar, Dijon mustard, and minced garlic in a small bowl. Season with salt and pepper.
  3. In a large bowl, combine chopped romaine lettuce, cherry tomatoes, diced chicken, crumbled bacon, chopped hard-boiled eggs, and diced avocado.
  4. Add blue cheese and chives if using.
  5. Drizzle the dressing over the salad.
  6. Toss gently to combine all ingredients.
