Cloud eggs are visually striking breakfast where whipped egg whites bake into fluffy ‘clouds’ with a runny yolk center. This recipe helps you create a delightful and impressive dish perfect for any morning.

  • Pinch of salt
  • Freshly ground black pepper to taste
  • Optional: 1-2 tablespoons grated Parmesan cheese or other desired toppings

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Carefully separate the egg whites from the yolks. Place the whites in a clean, dry bowl and the yolks in individual small bowls or ramekins.
  3. Add a pinch of salt to the egg whites. Using an electric mixer, beat the egg whites on high speed until stiff peaks form. The whites should be firm and hold their shape.
  4. Gently fold in any optional additions like grated cheese at this stage.
  5. Spoon the whipped egg whites onto the prepared baking sheet, forming four separate ‘clouds.’ Create a small well or indentation in the center of each cloud for the egg yolk.
  6. Bake the egg white clouds for 3-5 minutes, or until they are lightly golden and set.
  7. Carefully slide one egg yolk into the well of each baked egg white cloud.
  8. Return the baking sheet to the oven and continue to bake for another 3-5 minutes, or until the yolks are warmed through and set to your desired runniness.
  9. Remove from the oven, season with freshly ground black pepper, and serve immediately.

  • Ensure your bowl and beaters are completely grease-free for best egg white whipping results.
  • Be gentle when placing the yolks into the clouds to avoid breaking them.
