250g Mascarpone Cheese
2 Eggs
100g Granulated Sugar
200ml Strong Coffee
24 Ladyfingers
Cocoa Powder for dusting
Instructions
Beat the egg yolks and sugar until pale and creamy.
Gently fold in the mascarpone cheese until just combined.
Whip the egg whites until stiff peaks form, then fold them into the mascarpone mixture.
Dip the ladyfingers quickly into the strong coffee.
Arrange a layer of coffee-soaked ladyfingers in the bottom of a serving dish.
Spread half of the mascarpone cream over the ladyfingers.
Repeat with another layer of ladyfingers and the remaining cream.
Chill in the refrigerator for at least 4 hours, or preferably overnight.
Dust generously with cocoa powder before serving.
