2 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs
1 1/2 cups Italian-seasoned breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup olive oil
2 cups marinara sauce
8 ounces mozzarella cheese, sliced
1/4 cup grated Parmesan cheese for topping
Fresh basil leaves for garnish
Cooked pasta for serving
Instructions
Preheat your oven to 400°F (200°C).
Slice chicken breasts horizontally to create thinner cutlets.
Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with 1/2 cup Parmesan cheese.
Dredge each chicken cutlet in flour, then dip in egg, and finally coat with breadcrumb mixture, pressing gently to adhere.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Sear chicken cutlets for 2-3 minutes per side until golden brown.
Pour marinara sauce over the chicken in the skillet.
Top each chicken cutlet with mozzarella cheese slices and sprinkle with the remaining Parmesan cheese.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through and cheese is melted and bubbly.
Garnish with fresh basil leaves before serving.
Serve hot over your favorite cooked pasta.
Notes
For crispier chicken, you can bake the breaded cutlets on a wire rack set over a baking sheet for 10 minutes before adding the sauce and cheese.
Feel free to add a pinch of red pepper flakes to the marinara sauce for a little heat.
You can use pre-shredded mozzarella if you prefer, but slicing fresh mozzarella often gives a better melt.
