  • 1 packet taco seasoning

  • 8 taco shells
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheddar cheese
  • For the Pico de Gallo:
  • 2 Roma tomatoes, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • Salt to taste

Instructions

  1. Prepare the pico de gallo: In a medium bowl, combine diced tomatoes, red onion, cilantro, and lime juice. Season with salt and stir gently. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add chopped onion to the skillet and cook until softened, about 3-5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened.
  5. Warm the taco shells according to package directions.
  6. Assemble the tacos: Fill each taco shell with the seasoned beef mixture. Top with shredded lettuce, shredded cheddar cheese, and a generous spoonful of pico de gallo.
