Ingredients
Scale
3 ripe bananas, mashed
1/3 cup melted butter
1 teaspoon baking soda
Pinch of salt
3/4 cup sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
Instructions
Preheat your oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
In a large bowl, mash the ripe bananas well.
Stir in the melted butter, baking soda, salt, sugar, beaten egg, and vanilla extract. Mix until just combined.
Gently fold in the flour until no dry streaks remain. Do not overmix.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra moist muffins, ensure your bananas are very ripe, with plenty of brown spots.
Avoid overmixing the batter; this can lead to tough muffins.
You can add nuts or chocolate chips to the batter for extra flavor and texture.
