  • 1 cup powdered sugar, for rolling
  • 1/4 cup granulated sugar, for coating
  • 2 tablespoons ground cinnamon, for coating

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and 1/2 cup granulated sugar until light and fluffy. Beat in the vanilla extract.
  3. In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. If using, mix in the chopped pecans now.
  4. Roll the dough into small balls, about 1 inch in diameter. Place them 1 inch apart on the prepared baking sheets.
  5. Bake for 10 to 12 minutes, or until the edges are barely set and very light in color. Do not let them brown.
  6. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  7. While the cookies cool, prepare the coating. In a shallow dish, mix the 1/4 cup granulated sugar and 2 tablespoons ground cinnamon thoroughly. In a second shallow dish, place the powdered sugar.
  8. Once the cookies are completely cool, roll each cookie first in the cinnamon sugar mixture, then immediately roll it in the powdered sugar to create the classic snowball look.
  9. Place the finished cookies on a clean sheet of parchment paper to set the coating. These are your perfect, tender crumb cookies.
