Ingredients

Scale
  • 1 cup warm milk (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • ½ cup granulated sugar
  • 2 large eggs, at room temperature
  • ½ cup unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • For the Topping:
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. In a large bowl, combine warm milk and yeast. Let it sit for 5-10 minutes until foamy.
  2. Stir in ½ cup granulated sugar, eggs, melted butter, and vanilla extract into the yeast mixture.
  3. In a separate bowl, whisk together 4 cups flour and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  7. Punch down the dough and roll it out to about ½ inch thickness on a floured surface.
  8. Cut out donuts using a donut cutter or two different sized round cutters.
  9. Place the cut donuts on a parchment-lined baking sheet, cover them loosely, and let them rise for another 30-45 minutes.
  10. While the donuts are rising, prepare the topping by combining 1 cup granulated sugar and 2 tablespoons cinnamon in a shallow dish.
  11. Heat about 2 inches of vegetable oil in a large pot or Dutch oven to 350°F (175°C).
  12. Carefully fry the donuts in batches, about 1-2 minutes per side, until golden brown.
  13. Remove donuts from the oil with a slotted spoon and immediately dip them into the cinnamon sugar mixture, coating both sides.
  14. Place the coated donuts on a wire rack to cool slightly before serving.

Notes

  • Ensure your milk is warm, not hot, to avoid killing the yeast.
  • Room temperature eggs incorporate better into the dough.
  • Don’t overcrowd the pot when frying; this helps maintain the oil temperature.
  • You can use a piping bag with a large round tip to create the donut holes if you don’t have a donut cutter.
